March Winds and My Mom

March winds and April showers bring forth May flowers.
For whatever reason, this little poem perhaps, I always think of winds in the month of March and also, I refer to it as "my Mom's month". Mom would have been 96 on the 13th of March - it was a week ago today and I decided to live that day to her honor. Just a little deal or pact I made with myself but I truly do think about her so often this month. Two cousins mentioned Mom to me within days of each-other - well, one, shared this picture below with me. Mom, or, Naomi, must've been in her early 20s ... I love her smile and the spirit of fun that shines through. I really wonder how Martha got ahold of this photo! I don't think I'd ever seen it.
The other cousin was asking about a casserole she used to eat at Mom and Dad's house ... Mom was a great cook and some of her happiest moments were spent in the kitchen. She loved having company and her kitchen was filled with cooking and her table with great food, friends and family who partook not just of her yummy dishes but also, a lot of love, conversation and laughter. When you sat at Mom's table it may be an hour or more before you were up. The casserole was one the family nicknamed "Green Rice Casserole" My cousin asked about it one day and then my daughter, not knowing Sissy has asked for it, also wanted to make sure she had the ingredients down for it.
 Green Rice Casserole 
stew a chicken (Mom did a whole one, I sometimes just do breast meat)
2 cups uncooked rice (can boil it in the chicken broth)
chop onion (whole if small or 1/2 if large) and
chop 2 stalks celery (or to taste) fry it up until clear
1 can cream of mushroom soup
1 jar Cheese Whiz
2 boxes of frozen chopped broccoli - lightly cooked
Combine de-boned chicken and all other ingredients in a large bowl, mix thoroughly and place in a 13/9 casserole dish - top with grated cheese and bake at 350 degrees for 45 minutes or until heated through!
